Withering, also known as shriveling, evenly spread under certain temperature and humidity conditions, so as to moderately promote the activity of fresh leaf enzymes, the contents of the material undergoes moderate physical and chemical changes, exudes part of the water, so that the stems and leaves wilt, the color is dark green, and the green grass gas is dissipated, and the harvested fresh leaves are spread out according to a certain thickness, and through drying, the fresh leaves appear to be wilted. In the process of withering, a series of changes occur in the fresh leaves: the water is reduced, the leaves become soft from brittle and hard, which is easy to use Tea Fixation Machinery to knead into bars; effective withering, so that the grass of the fresh leaves subside and produce a fresh aroma, and have a fruity or floral aroma, and the finished tea is mellow in flavor without bitterness and astringency.

 When withering is not enough, the tea leaves have high water content, poor plasticity, easy to break when kneading, and even the loss of tea juice. The dry tea is made of short and broken cords, more pieces of end, low flavor and astringency, cloudy soup color, and green leaf bottom. When withering excessively, the withered leaves have less water content, the leaves are dry and hard, sticky small, it is difficult to become a strip when kneading, and the crushed tea increases. The dry tea made in this way is loose, with more flakes and low flavor. The color of gray withered does not show the hair, soup color leaf bottom dark.
